Ingredients

Kofta is a Middle Eastern dish which is usually made with either lamb or beef. In this recipe. I will be using some fillet beef. Not all curries have to cook for hours and hours, this is fast, tasty and easy to do! For the beef, I would recommend using a prime cut of beef ie fillet or sirloin as they are the most tender when cooking a fast dish. Pre-adding the spices to the meat will give it a deeper and more complex flavour but if you don't have the time don’t worry, it is just an extra step in building the flavour!

  • 400g fillet beef cut into strips
  • Olive oil for frying
  • 3 x beef tomatoes
  • 1 x inch ginger
  • 3 x cloves garlic slice
  • 1 x red chilli, diced
  • 4 x lime leaves
  • 1 x red pepper diced
  • 400ml light coconut milk
  • 2 x tsp turmeric
  • 2 x tsp garam masala
  • 1 x white onion diced
  • 60g red curry paste
  • 50g roasted peanuts
  • Lime wedges to garnish
  • 200g basmati rice
  • Fresh coriander, chopped
  • Sea salt and black pepper

Basmati rice

  • 200g basmati rice
  • 400ml water

Lime & ginger raita

  • 100g Greek yogurt
  • Juice & zest of one lime
  • 1 x tsp ginger puree
  • Chopped coriander
  • Salt and pepper

Method

  1. Heat a large pan and add your tsp of oil
  2. Separate your beef strips and season on a plate.
  3. Add your beef to the pan and do not shake the pan, leave the beef cook without agitation for one minute on each side
  4. Add in your garlic, chilli, ginger, onion and stir in.
  5. Add in your spices and lightly fry
  6. Add in your coconut milk and red curry paste and simmer for 7 minutes.
  7. Garnish with your chopped coriander, crunchy peanuts and lime wedge.
  8. Serve with basmati rice

Basmati rice

  1. Rinse your basmati rice
  2. Add your water and rice together in a relative sized pot ( not too big and not too small )
  3. Bring to the boil and simmer for 8-10 minutes. Always start the rice in cold water and you do not need a lid.
