Living on a family farm meant Chef Gearóid had an early appreciation for fresh food in his cooking. He honed his culinary skills across a multitude of places, including the Michelin starred Pied á Terre in London and Lea Linster, Luxemborg.

Being diagnosed with Coeliac Disease in 2013, Gearóid learned everything he could about his condition. He began to realise there was very little gluten-free food available; shopping for ingredients and preparing meals proved difficult. He began to look at how to cook his favourite meals could be cooked gluten-free in mind, and with no compromise on taste.
